Description

Juicy grilled shrimp marinated in lemon and oregano served with a creamy lemon-dill sauce.


Ingredients

  • 454 g (1 lb) large shrimp, peeled and deveined, tails on
  • 60 ml (1/4 cup) extra-virgin olive oil
  • 30 ml (2 tbsp) fresh lemon juice
  • 1 tsp (1.5 g) lemon zest
  • 2 garlic cloves, minced (6 g)
  • 2 tsp (4 g) dried oregano or 2 tbsp (6 g) chopped fresh oregano
  • 1 tsp (5 g) kosher salt
  • 1/2 tsp (1.5 g) black pepper, freshly ground
  • 1/2 tsp (2 g) granulated sugar
  • 8 wooden or metal skewers
  • 120 g (1/2 cup) plain Greek yogurt
  • 15 ml (1 tbsp) mayonnaise (optional)
  • 2 tbsp (8 g) fresh chopped dill
  • 15 ml (1 tbsp) lemon juice
  • 1/4 tsp (1 g) salt
  • Pinch of black pepper

Instructions

  1. Make the marinade by whisking olive oil, lemon juice, lemon zest, minced garlic, oregano, salt, pepper, and sugar in a bowl.
  2. Marinate the shrimp in the marinade for 20–30 minutes.
  3. Combine yogurt, mayonnaise, chopped dill, lemon juice, salt, and pepper in a bowl to prepare the sauce.
  4. Preheat the grill to high heat and oil the grates.
  5. Assemble the shrimp on skewers, ensuring gaps for even cooking.
  6. Grill the skewers on high heat for 2–3 minutes per side until cooked through.
  7. Transfer skewers to a platter, squeeze lemon juice over them, and let rest before serving with the sauce.

Notes

Marinate shrimp no longer than 60 minutes. Use wild-caught shrimp for the best results.
