Ingredients

  • 1 pound chicken breast, cut into 1-inch cubes
  • 2 tablespoons olive oil
  • 2 tablespoons mayonnaise
  • 1 tablespoon chili paste
  • ½ tablespoon smoked paprika
  • 1 teaspoon garlic granules
  • 1 teaspoon onion granules
  • 1 teaspoon dried parsley
  • Salt and pepper to taste
  • ¼ cup parmesan cheese, divided
  • 4 tablespoons unsalted butter
  • 3 cloves garlic, minced
  • 1 tablespoon fresh parsley, chopped
  • 1 teaspoon dried parsley
  • Remaining parmesan cheese reserved from marinade

Instructions

  1. Cut the chicken breasts into 1-inch bite-sized cubes and place them into a mixing bowl.
  2. Add olive oil, mayonnaise, chili paste, smoked paprika, garlic granules, onion granules, dried parsley, half of the parmesan cheese, salt, and pepper. Mix thoroughly until all chicken pieces are evenly coated.
  3. Thread the marinated chicken pieces onto skewers, placing about 4-6 pieces per skewer.
  4. Set your air fryer to 400°F (200°C) and preheat. Lightly spray the air fryer basket with cooking oil.
  5. Arrange the skewers in a single layer in the air fryer basket. Cook for 8-10 minutes, flipping halfway through, until chicken is fully cooked and no longer pink inside. The internal temperature should reach 165°F (74°C).
  6. While the chicken cooks, melt the unsalted butter in the microwave for about 10 seconds. Add minced garlic, remaining parmesan cheese, and fresh parsley to the melted butter and whisk until combined.
  7. Once cooked, generously brush the garlic parmesan butter over all sides of the chicken skewers.
  8. Serve the skewers immediately with wraps, rice, or creamy mashed potatoes.
