Rich, fudgy flourless chocolate brownies with a glossy top and molten center, made with just six ingredients.

- 255 g (9 oz) bittersweet chocolate (60–70% cacao)
- 115 g (½ cup / 4 oz) unsalted butter
- 200 g (1 cup) granulated sugar
- 3 large eggs (about 150 g without shells)
- 30 g (1/3 cup) unsweetened cocoa powder
- ½ tsp (2.5 g) kosher salt
- 1 tsp (5 ml) vanilla extract
- ½ tsp instant espresso powder (optional)
Instructions
- Preheat the oven to 180°C (350°F) and line an 8 x 8-inch pan with parchment, leaving a 2-inch overhang.
- Melt the chocolate and butter together in a heatproof bowl over simmering water or in the microwave.
- Whisk the eggs and sugar together until pale and slightly thickened.
- Combine the warm chocolate mixture with the egg mixture while whisking constantly.
- Fold in the cocoa powder and salt until no dry streaks remain.
- Pour the batter into the prepared pan and smooth the top.
- Bake for 22–26 minutes, rotating the pan at 12 minutes.
- Cool on a wire rack, then refrigerate for at least 20 minutes before slicing.
Notes
For a fudgier texture, reduce baking time to 20-22 minutes. Use a thin-bladed knife for clean cuts.
