Ingredients

- 1 pound fresh spinach (or 16 oz frozen spinach)
- 2 tablespoons butter
- 2 tablespoons all-purpose flour
- 1 1/2 cups milk
- 1/4–1/2 cup grated Parmesan cheese (optional)
- 3/4 cup breadcrumbs (panko or fresh)
- Salt, to taste
- White pepper, to taste
- Pinch of nutmeg
- Lemon juice, to taste
Instructions
- Blanch spinach in salted boiling water for 30-60 seconds, then shock in ice water. Drain and squeeze dry.
- Melt butter in a saucepan, stir in flour to make a roux. Cook for 1-2 minutes.
- Slowly whisk in milk, simmer until thickened. Season with salt, pepper, and nutmeg, add cheese if desired.
- Fold spinach into the sauce and simmer gently for 2-3 minutes.
- In a separate skillet, toast breadcrumbs in oil or butter until golden brown.
- Serve creamed spinach topped with toasted breadcrumbs.
Notes
Experiment with different cheeses and breadcrumbs for variety. Toast breadcrumbs just before serving to maintain crunch.
