Ingredients

  • 1 pound fresh spinach (or 16 oz frozen spinach)
  • 2 tablespoons butter
  • 2 tablespoons all-purpose flour
  • 1 1/2 cups milk
  • 1/41/2 cup grated Parmesan cheese (optional)
  • 3/4 cup breadcrumbs (panko or fresh)
  • Salt, to taste
  • White pepper, to taste
  • Pinch of nutmeg
  • Lemon juice, to taste

Instructions

  1. Blanch spinach in salted boiling water for 30-60 seconds, then shock in ice water. Drain and squeeze dry.
  2. Melt butter in a saucepan, stir in flour to make a roux. Cook for 1-2 minutes.
  3. Slowly whisk in milk, simmer until thickened. Season with salt, pepper, and nutmeg, add cheese if desired.
  4. Fold spinach into the sauce and simmer gently for 2-3 minutes.
  5. In a separate skillet, toast breadcrumbs in oil or butter until golden brown.
  6. Serve creamed spinach topped with toasted breadcrumbs.

Notes

Experiment with different cheeses and breadcrumbs for variety. Toast breadcrumbs just before serving to maintain crunch.
