  • 4 boneless, skinless chicken breasts
  • 46 oz brie cheese, sliced
  • 1/2 cup cranberry sauce or compote
  • 1 cup breadcrumbs
  • 2 tbsp olive oil
  • Salt, to taste
  • Pepper, to taste

Instructions

  1. Prepare ingredients: Slice brie and gather cranberry sauce, chicken, breadcrumbs, salt, pepper, and olive oil.
  2. Create pockets in chicken breasts by slicing along the thickest side.
  3. Stuff each pocket with 1–2 tbsp of cranberry sauce and a slice of brie, sealing edges with toothpicks if needed.
  4. Season the chicken with salt and pepper, brush with olive oil, and coat with breadcrumbs.
  5. Heat a skillet over medium-high heat with oil and sear each chicken breast for 2–3 minutes per side until golden brown.
  6. Transfer the skillet to a preheated oven at 375°F (190°C) and bake for 25–30 minutes, or until internal temp reaches 160°F (71°C).
  7. Let the chicken rest for 5–10 minutes before serving.
  8. Slice and garnish with fresh herbs if desired.
