- 4 boneless, skinless chicken breasts
- 4–6 oz brie cheese, sliced
- 1/2 cup cranberry sauce or compote
- 1 cup breadcrumbs
- 2 tbsp olive oil
- Salt, to taste
- Pepper, to taste
Instructions
- Prepare ingredients: Slice brie and gather cranberry sauce, chicken, breadcrumbs, salt, pepper, and olive oil.
- Create pockets in chicken breasts by slicing along the thickest side.
- Stuff each pocket with 1–2 tbsp of cranberry sauce and a slice of brie, sealing edges with toothpicks if needed.
- Season the chicken with salt and pepper, brush with olive oil, and coat with breadcrumbs.
- Heat a skillet over medium-high heat with oil and sear each chicken breast for 2–3 minutes per side until golden brown.
- Transfer the skillet to a preheated oven at 375°F (190°C) and bake for 25–30 minutes, or until internal temp reaches 160°F (71°C).
- Let the chicken rest for 5–10 minutes before serving.
- Slice and garnish with fresh herbs if desired.
