Ingredients

  • 4 chicken breasts
  • 8 ounces brie cheese, cut into slices
  • 1 cup cranberry sauce
  • 2 tablespoons fresh rosemary, chopped
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Lay out chicken breasts and pat dry with paper towels.
  3. Cut pockets into the chicken breasts without slicing all the way through.
  4. Stuff each pocket with brie slices and cranberry sauce, securing openings with toothpicks.
  5. Season chicken with salt, pepper, and rosemary.
  6. Heat olive oil in a skillet over medium-high heat and sear chicken for 2-3 minutes on each side until golden brown.
  7. Transfer chicken to a baking dish, sprinkle minced garlic on top, and bake for 25-30 minutes, or until cooked through (165°F internal temperature).
