- 4 chicken breasts
- 8 ounces brie cheese, cut into slices
- 1 cup cranberry sauce
- 2 tablespoons fresh rosemary, chopped
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- Salt and pepper to taste
Instructions
- Preheat the oven to 375°F (190°C).
- Lay out chicken breasts and pat dry with paper towels.
- Cut pockets into the chicken breasts without slicing all the way through.
- Stuff each pocket with brie slices and cranberry sauce, securing openings with toothpicks.
- Season chicken with salt, pepper, and rosemary.
- Heat olive oil in a skillet over medium-high heat and sear chicken for 2-3 minutes on each side until golden brown.
- Transfer chicken to a baking dish, sprinkle minced garlic on top, and bake for 25-30 minutes, or until cooked through (165°F internal temperature).
- Let rest for 5-7 minutes before slicing and serving.
Notes
Using room-temperature brie ensures it melts reliably. If using frozen cranberries, prepare a quick stovetop compote for filling.
