This adorable Cottontail Martini is a creamy, pastel pink cocktail featuring vanilla vodka and coconut rum. Rimmed with shredded coconut and topped with marshmallow ‘tails,’ it’s the perfect festive drink for Spring.


Ingredients

  • 1.5 oz vanilla vodka (Chilled)
  • 1.5 oz coconut rum (Like Malibu)
  • 2 oz half-and-half (Or coconut cream)
  • 1 tsp grenadine (For pink color)
  • 1/2 tsp pineapple juice (Optional)
  • 1/4 cup shredded coconut (Sweetened, for rim)
  • 2 tbsp honey (For rimming)
  • 3 mini marshmallows (Garnish)

Instructions

  1. Dip the rim of a martini glass in honey, then roll in shredded coconut to coat.
  2. Combine vanilla vodka, coconut rum, half-and-half, pineapple juice, and grenadine in a shaker with ice.
  3. Shake vigorously for 20 seconds until frothy and cold.
  4. Strain into the prepared glass and top with floating marshmallows.
