This adorable Cottontail Martini is a creamy, pastel pink cocktail featuring vanilla vodka and coconut rum. Rimmed with shredded coconut and topped with marshmallow ‘tails,’ it’s the perfect festive drink for Spring.

- 1.5 oz coconut rum (Like Malibu)
- 2 oz half-and-half (Or coconut cream)
- 1 tsp grenadine (For pink color)
- 1/2 tsp pineapple juice (Optional)
- 1/4 cup shredded coconut (Sweetened, for rim)
- 2 tbsp honey (For rimming)
- 3 mini marshmallows (Garnish)
Instructions
- Dip the rim of a martini glass in honey, then roll in shredded coconut to coat.
- Combine vanilla vodka, coconut rum, half-and-half, pineapple juice, and grenadine in a shaker with ice.
- Shake vigorously for 20 seconds until frothy and cold.
- Strain into the prepared glass and top with floating marshmallows.
