Description

Warm and golden flatbreads made with cottage cheese and eggs, perfect for sandwiches or as a dip vehicle.


Ingredients

  • 250 g (1 cup) full-fat cottage cheese
  • 2 large eggs
  • 200 g (1 1/2 cups) all-purpose flour
  • 8 g (1 tsp) baking powder
  • 3 g (1/2 tsp) fine salt
  • 15 ml (1 tbsp) olive oil, plus extra for cooking
  • Optional: 15 g (1/4 cup) grated Parmesan or 10 g (2 tbsp) chopped fresh herbs

Instructions

  1. Drain and mash the cottage cheese and whisk with eggs until uniform.
  2. In a separate bowl, whisk together flour, baking powder, and salt.
  3. Fold the dry ingredients into the cottage cheese mixture and add olive oil, mixing until a shaggy dough forms.
  4. Let the dough rest for 10 minutes, then divide into 6 portions and shape each into a ball.
  5. Heat a skillet over medium heat, roll each ball into a flatbread, and cook for 2–3 minutes per side until golden.
  6. Transfer cooked flatbreads to a wire rack.

Notes

For best results, allow the dough to rest and do not skip the baking powder.
