Description
Warm and golden flatbreads made with cottage cheese and eggs, perfect for sandwiches or as a dip vehicle.
Ingredients

- 250 g (1 cup) full-fat cottage cheese
- 2 large eggs
- 200 g (1 1/2 cups) all-purpose flour
- 8 g (1 tsp) baking powder
- 3 g (1/2 tsp) fine salt
- 15 ml (1 tbsp) olive oil, plus extra for cooking
- Optional: 15 g (1/4 cup) grated Parmesan or 10 g (2 tbsp) chopped fresh herbs
Instructions
- Drain and mash the cottage cheese and whisk with eggs until uniform.
- In a separate bowl, whisk together flour, baking powder, and salt.
- Fold the dry ingredients into the cottage cheese mixture and add olive oil, mixing until a shaggy dough forms.
- Let the dough rest for 10 minutes, then divide into 6 portions and shape each into a ball.
- Heat a skillet over medium heat, roll each ball into a flatbread, and cook for 2–3 minutes per side until golden.
- Transfer cooked flatbreads to a wire rack.
Notes
For best results, allow the dough to rest and do not skip the baking powder.
