Description

A hearty and flavorful vegetable lasagna perfect for a comforting dinner.


Ingredients

  • 9 lasagna noodles
  • 2 cups ricotta cheese
  • 3 cups spinach, fresh
  • 1 zucchini, sliced
  • 1 red bell pepper, chopped
  • 3 cups marinara sauce
  • 2 cups mozzarella cheese, shredded
  • 1/2 cup Parmesan cheese, grated
  • 1 tablespoon olive oil
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Cook the lasagna noodles according to package instructions; drain and set aside.
  3. Heat olive oil in a skillet over medium heat. Add zucchini and bell pepper; sauté until tender.
  4. Add the spinach and cook until wilted. Season with Italian seasoning, salt, and pepper.
  5. Spread a thin layer of marinara sauce on the bottom of a baking dish.
  6. Layer 3 noodles, half of the ricotta mixture, half of the vegetable mixture, and a third of the mozzarella cheese.
  7. Repeat the layering, finishing with noodles and remaining marinara sauce on top. Sprinkle with Parmesan cheese.
  8. Bake for 35-40 minutes or until bubbly and golden.
  9. Let it cool for 10 minutes before slicing and serving.

Notes

Allowing the lasagna to rest after baking enhances its flavor and texture.
