- 9 lasagna noodles
- 2 cups ricotta cheese
- 3 cups spinach, fresh
- 1 zucchini, sliced
- 1 red bell pepper, chopped
- 3 cups marinara sauce
- 2 cups mozzarella cheese, shredded
- 1/2 cup Parmesan cheese, grated
- 1 tablespoon olive oil
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
Instructions
- Preheat your oven to 375°F (190°C).
- Cook the lasagna noodles according to package instructions; drain and set aside.
- Heat olive oil in a skillet over medium heat. Add zucchini and bell pepper; sauté until tender.
- Add the spinach and cook until wilted. Season with Italian seasoning, salt, and pepper.
- Spread a thin layer of marinara sauce on the bottom of a baking dish.
- Layer 3 noodles, half of the ricotta mixture, half of the vegetable mixture, and a third of the mozzarella cheese.
- Repeat the layering, finishing with noodles and remaining marinara sauce on top. Sprinkle with Parmesan cheese.
- Bake for 35-40 minutes or until bubbly and golden.
- Let it cool for 10 minutes before slicing and serving.

Allowing the lasagna to rest after baking enhances its flavor and texture.
