Ingredients

  • 1 pork tenderloin
  • 1 cup breadcrumbs
  • 1/4 cup fresh parsley, chopped
  • 2 cloves garlic, minced
  • 1 tsp thyme
  • 1/2 tsp red pepper flakes
  • Salt, to taste
  • Black pepper, to taste
  • 1 apple, finely diced
  • 2 tbsp olive oil

Instructions

  1. Preheat oven to 400°F.
  2. Butterfly the pork tenderloin by making a deep cut lengthwise down the center, stopping about 1 inch from the other side. Open the tenderloin like a book.
  3. In a small bowl, combine the breadcrumbs, parsley, garlic, thyme, red pepper flakes, salt, and black pepper.
  4. Spread the breadcrumb mixture evenly over the opened tenderloin. Fold the two sides back together.
  5. Heat olive oil in a large oven-safe skillet over medium-high heat. Sear the stuffed tenderloin on all sides, about 2–3 minutes per side, until browned.
  6. Transfer the skillet to the preheated oven and roast for 15-20 minutes, or until the pork reaches an internal temperature of 145°F.
  7. Let the pork rest for 5 minutes before slicing and serving.

Notes

Try adding bacon or dried cranberries for extra flavor variations. Pair with pan sauce made from deglazed fond.
