  • 1 cup almonds (toasted and roughly chopped)
  • 1/2 cup semi-sweet chocolate chips (optional)

Instructions

  1. Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
  2. In a bowl, whisk together the flour, cocoa powder, baking powder, and salt. Set aside.
  3. In a large mixing bowl, beat the granulated sugar and eggs together until light and fluffy. Add the vanilla and almond extracts, mixing until well combined.
  4. Gradually add the dry ingredients to the egg mixture, mixing until just combined. Fold in the chopped almonds and chocolate chips, if using.
  5. Divide the dough in half and shape each portion into a log about 12 inches long and 2 inches wide on the prepared baking sheet. Flatten the logs slightly.
  6. Bake in the preheated oven for 25–30 minutes, or until the logs are firm and slightly cracked on top. Remove from the oven and let cool for about 10 minutes.
  7. Using a sharp knife, slice the logs diagonally into 1/2-inch thick pieces.
  8. Place the biscotti cut side down on the baking sheet and return to the oven. Bake for an additional 10–15 minutes, or until the biscotti are crisp and dry. Allow to cool completely on a wire rack.
