Instructions
- In a small nonstick frying pan over medium-low heat, heat 1 tablespoon of chili crisp along with 1 teaspoon of toasted sesame oil until the mixture is shimmering.
- Swirl the pan or use the back of a spoon to evenly spread the chili crisp and oil mixture across the surface.
- Gently crack 2 large eggs into the pan without disturbing them. Season with a pinch of kosher salt.
- Cook the eggs undisturbed until the whites are fully set but the yolks remain runny, with the edges becoming crispy—this should take about 3 to 5 minutes.
- Slide the cooked eggs onto a plate, toast, or a warm bowl of rice.
- Pour any remaining chili crisp oil from the pan over the eggs for added flavor.
- Sprinkle the sliced scallions and furikake seasoning over the eggs as a finishing touch. Serve immediately while warm.
