Ingredients

  • 1 teaspoon toasted sesame oil
  • 1 medium scallion, thinly sliced
  • 1 pinch kosher salt
  • 2 large eggs
  • Toast or a warm bowl of rice (optional)
  • Furikake, for garnish

Instructions

  1. In a small nonstick frying pan over medium-low heat, heat 1 tablespoon of chili crisp along with 1 teaspoon of toasted sesame oil until the mixture is shimmering.
  2. Swirl the pan or use the back of a spoon to evenly spread the chili crisp and oil mixture across the surface.
  3. Gently crack 2 large eggs into the pan without disturbing them. Season with a pinch of kosher salt.
  4. Cook the eggs undisturbed until the whites are fully set but the yolks remain runny, with the edges becoming crispy—this should take about 3 to 5 minutes.
  5. Slide the cooked eggs onto a plate, toast, or a warm bowl of rice.
  6. Pour any remaining chili crisp oil from the pan over the eggs for added flavor.
  7. Sprinkle the sliced scallions and furikake seasoning over the eggs as a finishing touch. Serve immediately while warm.
