Description

Enjoy tender, juicy chicken with a balanced spice blend and silky garlic sauce, perfect for wraps or serving over rice.


Ingredients

  • 680 g (1.5 lb) boneless skinless chicken thighs, sliced into 5 mm (1/4-inch) strips
  • 120 g (1/2 cup) plain yogurt
  • 30 ml (2 tbsp) lemon juice
  • 30 ml (2 tbsp) olive oil
  • 2 cloves garlic, minced
  • 10 g (2 tsp) ground cumin
  • 6 g (1 tsp) ground coriander
  • 6 g (1 tsp) smoked paprika
  • 2 g (1/2 tsp) ground turmeric
  • 1 g (1/4 tsp) ground cinnamon
  • 4 g (3/4 tsp) kosher salt
  • 1 g (1/4 tsp) black pepper
  • For garlic sauce: 120 g (1/2 cup) mayonnaise, 1 garlic clove grated, 10 ml (2 tsp) lemon juice, salt to taste
  • Optional toppings: sliced pickles, thinly sliced red onion, chopped parsley, sumac, warm pita or flatbread

Instructions

  1. Slice and measure the chicken.
  2. Make the marinade and coat the chicken.
  3. Make the garlic sauce.
  4. Preheat the pan or broiler.
  5. Cook the chicken in batches.
  6. Rest and slice the chicken.
  7. Assemble and serve.

Notes

Marinate chicken for up to 8 hours for deeper flavor. Use thighs for best results; breasts can dry out.
