- 680 g (1.5 lb) boneless skinless chicken thighs, sliced into 5 mm (1/4-inch) strips
- 120 g (1/2 cup) plain yogurt
- 30 ml (2 tbsp) lemon juice
- 30 ml (2 tbsp) olive oil
- 2 cloves garlic, minced
- 10 g (2 tsp) ground cumin
- 6 g (1 tsp) ground coriander
- 6 g (1 tsp) smoked paprika
- 2 g (1/2 tsp) ground turmeric
- 1 g (1/4 tsp) ground cinnamon
- 4 g (3/4 tsp) kosher salt
- 1 g (1/4 tsp) black pepper
- For garlic sauce: 120 g (1/2 cup) mayonnaise, 1 garlic clove grated, 10 ml (2 tsp) lemon juice, salt to taste
- Optional toppings: sliced pickles, thinly sliced red onion, chopped parsley, sumac, warm pita or flatbread
Instructions
- Slice and measure the chicken.
- Make the marinade and coat the chicken.
- Make the garlic sauce.
- Preheat the pan or broiler.
- Cook the chicken in batches.
- Rest and slice the chicken.
- Assemble and serve.
Notes
Marinate chicken for up to 8 hours for deeper flavor. Use thighs for best results; breasts can dry out.
