Description

A warm, crowd-pleasing appetizer featuring crispy-roasted cauliflower transformed into a luscious, cheesy dip that’s family-approved and endlessly customizable.


Ingredients

  • 1 medium head cauliflower, cut into florets
  • 2 tablespoons olive oil
  • Salt and pepper, to taste
  • 4 oz cream cheese, softened
  • 1 cup Greek yogurt
  • 1 cup grated Parmesan cheese
  • ½ cup shredded white cheddar cheese
  • 2 green onions, chopped
  • Red pepper flakes, to taste

Instructions

  1. Preheat oven to 400°F (200°C) and line a baking sheet with foil or parchment.
  2. Toss cauliflower florets with olive oil, salt, and pepper. Spread on the prepared baking sheet and roast for 25-30 minutes until golden.
  3. Transfer roasted cauliflower to a food processor. Add cream cheese, Greek yogurt, 1 cup Parmesan, and cheddar; blend until smooth. Fold in green onions and red pepper flakes.
  4. Spoon mixture into a baking dish, top with remaining Parmesan cheese, and bake for 20 minutes until golden and bubbly.
  5. Serve warm with baguette slices, crackers, or veggies.

Notes

For a chunkier dip, reserve some roasted cauliflower florets and fold them in after blending. Adjust salt and acidity to taste at each stage.
