- 1 medium head cauliflower, cut into florets
- 2 tablespoons olive oil
- Salt and pepper, to taste
- 4 oz cream cheese, softened
- 1 cup Greek yogurt
- 1 cup grated Parmesan cheese
- ½ cup shredded white cheddar cheese
- 2 green onions, chopped
- Red pepper flakes, to taste
Instructions
- Preheat oven to 400°F (200°C) and line a baking sheet with foil or parchment.
- Toss cauliflower florets with olive oil, salt, and pepper. Spread on the prepared baking sheet and roast for 25-30 minutes until golden.
- Transfer roasted cauliflower to a food processor. Add cream cheese, Greek yogurt, 1 cup Parmesan, and cheddar; blend until smooth. Fold in green onions and red pepper flakes.
- Spoon mixture into a baking dish, top with remaining Parmesan cheese, and bake for 20 minutes until golden and bubbly.
- Serve warm with baguette slices, crackers, or veggies.
Notes
For a chunkier dip, reserve some roasted cauliflower florets and fold them in after blending. Adjust salt and acidity to taste at each stage.
