Ingredients

  • 1.5 lbs chicken thighs, boneless
  • 1 cup plain yogurt
  • 4 cloves garlic, minced
  • 1 inch ginger, minced
  • 2 tsp garam masala
  • 1 tsp cumin
  • 1 tsp coriander
  • 1 tsp paprika or Kashmiri chili powder
  • 1/2 tsp turmeric
  • 1 tsp salt
  • 1 cup tomato puree or crushed tomatoes
  • 3 tbsp butter
  • 1 cup heavy cream
  • 1 tsp sugar or honey (optional)
  • 2 tsp kasuri methi (dried fenugreek leaves, optional)

Instructions

  1. Marinate the chicken in a mix of yogurt, ginger, garlic, garam masala, cumin, coriander, paprika, turmeric, and salt for at least 10 minutes.
  2. Cook the chicken in a skillet or grill pan over medium heat until browned and cooked through, then set aside.
  3. Build the sauce by adding butter to the same pan, then sauté more garlic and ginger for 30 seconds before adding tomato puree and simmering for 10-15 minutes.
  4. Blend the sauce until smooth using a blender or immersion blender.
  5. Finish the curry by returning the sauce to the pan, adding butter and cream, and incorporating the cooked chicken. Simmer gently for 5-8 minutes.

Notes

For a smooth texture, blend the sauce. If desired, cook chicken under the broiler for a smoky flavor.
