  • 1 French baguette, sliced into ½-inch rounds (about 1820 slices)
  • 1 tablespoon olive oil (for brushing)
  • 3 large fresh mozzarella slices (or mozzarella log)
  • 12 Roma tomatoes, thinly sliced
  • Fresh basil leaves (1 per bite)
  • ¼ cup balsamic glaze
  • 45 black olives, chopped finely for ghost eyes and mouths
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 375°F (190°C). Place baguette slices on a baking sheet, brush with olive oil, and toast for 8–10 minutes until golden and crispy. Let cool.
  2. Use a ghost-shaped cookie cutter to cut the mozzarella into ghost shapes. If you don’t have a cutter, use a small knife to create teardrop shapes and a straw to make eye holes.
  3. Place one basil leaf on each toasted baguette slice, followed by a thin slice of tomato.
  4. Top each tomato slice with a mozzarella ghost, allowing the edges to drape slightly for a floating effect.
  5. Use tiny pieces of black olive to create eyes and mouths on the mozzarella ghosts.
  6. Drizzle lightly with balsamic glaze and sprinkle with salt and pepper.
  7. Serve immediately for the best taste and texture.

  • Use store-bought crostini to save time.
  • For neat ghost faces, use toothpicks or tweezers to place the olive pieces.
  • For a vegan option, use dairy-free mozzarella and balsamic reduction.
  • Crostini can be made up to 2 days in advance. Mozzarella ghosts can be cut a few hours ahead and stored between parchment paper.
