Description

A delicious no-bake dessert that combines a crunchy graham cracker crust, a silky lemon-cream layer, and a fresh blueberry topping.


Ingredients

  • 1 ½ cups graham cracker crumbs
  • ½ cup unsalted butter, melted
  • ⅓ cup granulated sugar
  • 8 oz cream cheese, softened
  • 1 cup powdered sugar
  • ½ cup fresh lemon juice
  • Zest of 1 lemon
  • 1 cup heavy cream
  • 2 cups fresh blueberries
  • 1 tablespoon granulated sugar (for blueberries)

Instructions

  1. In a medium bowl, combine graham cracker crumbs, melted butter, and sugar. Press into a 9×9 inch baking dish to form the crust.
  2. In a large bowl, whip the heavy cream until soft peaks form. Set aside.
  3. In another bowl, beat the cream cheese until smooth. Gradually add powdered sugar, lemon juice, and zest; mix until combined.
  4. Gently fold whipped cream into the cream cheese mixture until incorporated.
  5. Pour lemon-cream layer over the crust and smooth the top. Cover and refrigerate for at least 4 hours or until set.
  6. In a small bowl, toss blueberries with sugar and let sit for 15 minutes to release juices.
  7. Once set, top the cream layer with the blueberry mixture. Slice and serve chilled.

Notes

For best results, chill overnight. You can also substitute other fruits or make it gluten-free.
