A delicious no-bake dessert that combines a crunchy graham cracker crust, a silky lemon-cream layer, and a fresh blueberry topping.

- 1 ½ cups graham cracker crumbs
- ½ cup unsalted butter, melted
- ⅓ cup granulated sugar
- 8 oz cream cheese, softened
- 1 cup powdered sugar
- ½ cup fresh lemon juice
- Zest of 1 lemon
- 1 cup heavy cream
- 2 cups fresh blueberries
- 1 tablespoon granulated sugar (for blueberries)
Instructions
- In a medium bowl, combine graham cracker crumbs, melted butter, and sugar. Press into a 9×9 inch baking dish to form the crust.
- In a large bowl, whip the heavy cream until soft peaks form. Set aside.
- In another bowl, beat the cream cheese until smooth. Gradually add powdered sugar, lemon juice, and zest; mix until combined.
- Gently fold whipped cream into the cream cheese mixture until incorporated.
- Pour lemon-cream layer over the crust and smooth the top. Cover and refrigerate for at least 4 hours or until set.
- In a small bowl, toss blueberries with sugar and let sit for 15 minutes to release juices.
- Once set, top the cream layer with the blueberry mixture. Slice and serve chilled.
Notes
For best results, chill overnight. You can also substitute other fruits or make it gluten-free.
