- 3 large eggs (separated into whites and yolks)
- ¼ tsp cream of tartar
- ½ cup cottage cheese (blended)
- 1 tsp vanilla extract
- 1 tsp honey
- ½ tsp salt
- 2 tbsp cornstarch
- ½ cup fresh blueberries
Instructions
- Preheat your oven to 300°F (150°C) and line a baking sheet with parchment paper to ensure the cloud breads don’t stick.
- Separate the egg whites from the yolks. In a large bowl, add egg whites and cream of tartar. Beat with an electric mixer until stiff peaks form, creating a light and airy foam.
- In a separate smaller bowl, whisk together the egg yolks, blended cottage cheese, vanilla extract, cornstarch, salt, and honey until smooth and well combined.
- Gently fold the egg yolk mixture into the beaten egg whites using a spatula. Be careful not to overmix in order to keep the batter light and fluffy.
- Scoop the batter onto the prepared baking sheet to form individual bread clouds. Evenly top each with fresh blueberries.
- Place the baking sheet in the oven and bake for 20-25 minutes, or until the cloud breads turn golden and set firm.
- Remove from the oven and let the cloud breads cool on the baking sheet for a few minutes before transferring them to a wire rack. Serve warm and optionally spread with butter for added richness.
