Ingredients
Scale
- 2 ripe bananas, mashed
- 1/4 cup butter, melted
- 1 egg, beaten
- 1/2 to 3/4 cup sugar
- 1/2 teaspoon salt
- 3 to 4 cups all-purpose flour
- 1 tablespoon active dry yeast
- 1/2 cup warm milk (about 100°F)
- 3/4 to 1 cup cinnamon sugar (for filling)
- 4 ounces cream cheese, softened (for icing)
- 1/4 cup butter (for icing)
- 1 to 1.5 cups powdered sugar (for icing)
- Vanilla extract (for icing)
- Fresh banana slices (optional topping)
Instructions
- Activate yeast: Warm milk and stir in sugar and yeast. Let sit until foamy (5-10 minutes).
- Mix dough: In a bowl, mix mashed bananas, melted butter, egg, sugar, salt, and flour. Knead until smooth (10-15 minutes).
- Let dough rise: Place dough in a greased bowl, cover, and let rise until doubled (1-1.5 hours).
- Prepare rolls: Roll out dough, spread with butter and cinnamon sugar, roll up tightly, and cut into 12 pieces.
- Second rise: Place in a greased pan, cover, and let rise for 30 minutes.
- Bake: Preheat oven to 350°F and bake rolls for 25-30 minutes until golden.
- Frost: Mix cream cheese and butter for icing, then spread over warm rolls and top with banana slices.
Notes
For best results, use very ripe bananas for maximum flavor. If the dough feels sticky, chill before cutting to make slicing easier.
