- 4 large Eggs
- 1 cup Rolled old-fashioned oats
- 1 Banana
- 1/3 cup Maple syrup
- 1 tsp Baking soda
- 1 cup Blueberries
Instructions
- Preheat your oven to 350 degrees Fahrenheit. Lightly spray two 2-cup glass bowls with non-stick spray and place them on a large baking sheet for easy handling.
- Add the cottage cheese, eggs, oats, banana, maple syrup, and baking soda to a high-powered blender. Blend the mixture until smooth. If the batter is too thick, add a small amount of milk to thin it out slightly.
- Pour the blended batter evenly into the prepared bowls, filling them more than halfway. Top each bowl generously with fresh blueberries.
- Bake the bowls in the preheated oven for 35 to 40 minutes. The bowls are done when the top is golden brown, the mixture has puffed up, and the surface feels firm to the touch.
- Remove the bowls from the oven and allow them to cool for at least 10 minutes before enjoying. For meal prep, cover the bowls with lids and refrigerate for up to one week.
