Ingredients

  • 4 pounds apples (McIntosh, Fuji, Honeycrisp, Gala, or Braeburn)
  • 1 cup light brown sugar (adjust to taste)
  • 1 tablespoon ground cinnamon
  • ½ teaspoon ground cloves
  • ½ cup apple cider (or unsweetened apple juice or water)
  • ¼ teaspoon salt

Instructions

  1. Prepare the Apples: Wash your apples thoroughly, peel them, core them, and chop them into roughly 1-inch pieces.
  2. Combine Ingredients: In a large, heavy-bottomed pot or Dutch oven, add the chopped apples, brown sugar, ground cinnamon, ground cloves, apple cider, and salt. Stir to coat the apples.
  3. Initial Simmer: Place the pot over medium heat and bring the mixture to a gentle simmer. Once simmering, reduce the heat to low, cover the pot, and let it cook for about 20-30 minutes until the apples are very soft.
  4. Puree the Apples: Remove the pot from heat and puree the apples using an immersion blender, food processor, or potato masher until smooth.
  5. Slow Cook to Perfection: Return the pureed apple mixture to the stovetop and cook uncovered over very low heat for 2 to 4 hours, stirring frequently until thickened.
  6. Test for Doneness: Spoon a small amount onto a cold plate. If it holds its shape without liquid separating, it’s done.
  7. Taste and Adjust: Taste the apple butter and adjust sweetness or spices as desired.
