Description

Crispy and healthy air fryer vegetables cooked to perfection with minimal oil. A quick side dish for any meal.


Ingredients

  • 800 g mixed vegetables (about 6 cups), firm and tender
  • 30 ml olive oil (2 tbsp)
  • 5 g kosher salt (1 tsp)
  • 1/2 tsp freshly ground black pepper
  • 1/2 tsp garlic powder
  • Optional: fresh herbs (parsley, thyme) and a squeeze of lemon
  • Optional add-ins: parmesan, chili flakes, balsamic glaze

Instructions

  1. Choose and cut the vegetables, ensuring even sizes for uniform cooking.
  2. Toss the mixed vegetables with olive oil, salt, pepper, and garlic powder in a large bowl.
  3. Preheat the air fryer to 200°C (400°F) for 3 minutes.
  4. Place vegetables in a single layer in the air fryer and cook for 8 minutes; shake or turn, then cook for another 6–7 minutes.
  5. Transfer to a serving bowl, toss with lemon and herbs if desired, and serve immediately.

Notes

Cut vegetables uniformly to ensure even cooking. Avoid overcrowding the air fryer for best results.
