Description

Delicious and healthy air-fried Mediterranean vegetables, perfect as a side dish or light main.


Ingredients

  • 1 zucchini, sliced
  • 1 bell pepper, chopped
  • 1 cup cherry tomatoes
  • 1 red onion, sliced
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon dried oregano
  • Salt and pepper to taste

Instructions

  1. Preheat the air fryer to 400°F (200°C).
  2. In a large bowl, combine all the vegetables.
  3. Drizzle with olive oil and sprinkle with garlic powder, oregano, salt, and pepper.
  4. Toss to coat evenly.
  5. Place the vegetables in the air fryer basket in a single layer.
  6. Cook for 15-20 minutes, shaking halfway through, until veggies are tender and slightly charred.
